An Authentic Brasserie Not to be confused with a bistro, which are traditionally small and, these days, fairly expensive, Brasserie JO is truly a traditional brasserie. Brasseries are characteristically large, noisy, casual and affordable, with good country wines and plenty of beer. "The joy and comfort of a brasserie comes from customers, who produce lively, comfortable noise when they're enjoying themselves," says Joho. "Here we encourage large groups of people and we've made it so tables can be moved around to accommodate them. And if you're alone, the bar is designed to serve single customers and make them comfortable, too."
